We carefully select the freshest in-season fish and other ingredients from carefully selected domestic and international sources. We choose a local, wild, sustainable fish as much as we can.
We have selected one of the finest Japanese short grain rice, blended with 2 kinds of koshihikari and sasanishiki, for our sushi rice.
Sushi Yoshizumi's nigiri are already adorned with his own blend of nigiri soy sauce. His custom blend, made from soy sauce, sake, and mirin, is designed to enhance the flavor of the fish.
SUSHI SEASONING VINEGAR
We use aged red vinegar (akazu) and sea salt to season our sushi rice. The red vinegar naturally sweetens the rice, so we do not need to add any additional sugar. This special touch makes our sushi extremely refreshing.
